Honey Lavender Madeleines

 

We are so thrilled to present another scrumptious dessert recipe using Extra Virgin Olive Oil. Today, we are featuring a honey and lavender madeleine which is so easy to make, and will for sure be appreciated by all your guests. As long as you can find a non stick madeleine pan, you are ready to bake!

 

Tip: If you cannot find any dried lavender flowers, you can try with a lavender honey, or a lavender infused honey. Lavender essential oil or essence is also an option. They can be found in any good speciality kitchen or baking store.


Ingredients

{ Makes 12 larges or 24 small madeleines}

80 g Honey
1 Lemon zest
120 g Cane sugar
4 Eggs
50 g Whole milk (can be substituted with Almond Milk)
1 Tbsp of dried lavender flowers, chopped
250 g Flour
1 tsp Baking powder
100 g Butter
1 Non-stick madeleine pan
 

 

Directions

 

In a bowl, mix the sugar, honey, eggs, lemon zest, lavender flowers and milk.

In another bowl, combine the flour and baking powder. Incorporate the melted butter and EVOO and mix well.

Mix the wet and dry ingredients together.

Butter and flour the madeleines pan. Add 1 tablespoon of the batter in each madeleine mold, and flatten it with the back of your spoon. Let it rest 2 hours in the freezer.

Preheat your oven to 350°F. Nake your madeleines for 7 to 10 minutes. Test with a knife before taking them out.
