Keep your EVOO away from the light
The antioxidants in Extra virgin Olive Oil {EVOO} are volatile and very sensitive to Light, Air, Heat and Time. For this reason, we always recommend to keep your bottle in a dark, cold place even after opening. The ideal temperature range is between 53 and 62 °F (12 - 18 °C).
Transferring the liquid gold into a cruet is also not a good idea as it can promote extra oxidation. Once the bottle is open, it is best to finish within 30 days.
Buying directly from the producer or a reputable stockiest is essential to ensure the EVOO has been stored properly since the time of milling.
