Our delicious apple and olive oil cake will become a staple in your house. I learned to cook this cake with my grandmother Irene as a child. We called this cake: Gateau Mamette. Growing up in Provence, olive oil was used in almost every dishes including desserts like this one.
The base of the cake is dairy free, but halfway during the cooking time we pour over a mixture of butter and sugar that will caramelize the top ... making this cake extra scrumptious. You can easily substitute the wheat flour for a gluten free flour.
Ingredients

240 gr flour

2 tsp baking powder

180 gr sugar

12 tbsp of Extra Virgin Olive Oil

12 tbsp of milk ( or almond milk)

4 eggs

1 lemon zest
-
1 tbsp of vanilla extract

6 apples
-
1 tbsp of melted butter or olive oil

1 egg
-
75 gr sugar

60 gr soft butter

Directions
Preheat your oven at 350°F
Cut parchment paper to fit your 10 x 10 cake pan, and brush it with 1 tbsp of melted butter or olive oil
In a large bowl, mix the flour, baking powder and sugar together.
Add the olive oil , mil, eggs and start to whisk until the batter becomes smooth.
Add the lemon zest, and vanilla extract.
Peel and grate finely 3 apples and add it to the batter.
Pour the batter in the prepared pan
Peel and slice the rest of the apples and place them on the top of the batter like you would for an apple pie.
Bake the cake for 40 minutes
During baking, mix the melted butter with the egg and the sugar.
After 40 minutes of cooking, take the cake out and add the prepared mixture on the top with a brush.
Cook for an additional 10 / 15 minutes
Let your cake cool off on a rack before removing from the pan
You can either glaze your cake with some apple jelly or dust it with some powdered sugar.
